Easy vanilla cupcakes with 2-ingredient British frosting, ready in just one hour!
Ingredients:
  • 0.5 cup white sugar
  • 7 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 0.75 cup self-rising flour
  • 4 cups confectioners' sugar
  • 0.5 cup butter, softened
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare 20 muffin cups by greasing or lining them with paper liners.
  • Using an electric mixer, cream together white sugar and 7 tablespoons of butter until smooth and creamy. Add eggs, vanilla extract, and baking powder and mix until smooth. Slowly sift in the flour until the batter is smooth. Divide the batter evenly by spooning 2 tablespoons into each muffin cup.
  • Bake in the preheated oven for about 15 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the tin for 3 minutes before transferring them to a wire rack to cool completely.
  • Combine confectioners' sugar and 1/2 cup of butter in a bowl, blending until you achieve a velvety frosting consistency. Then generously spread this luscious frosting onto your perfectly cooled cupcakes.
