Plum crumble cakes: Buttery, fruity perfection served with creamy ice cream on top.
Ingredients:
  • 6 plums, halved, stone removed
  • 115g caster sugar
  • 225g self-raising flour
  • 185ml buttermilk
  • 1 egg, lightly beaten
  • 4.40 gm vanilla extract
  • 75g butter, melted
  • Double cream, to serve (optional)
  • 75g plain flour
  • 60g caster sugar
  • 2.50 gm ground cinnamon
  • 50g butter, at room temperature
Instructions:
  • Preheat your oven to 190°C and lightly grease twelve 1/3 cup (80ml) muffin pans.
  • In a saucepan, combine plums and half the sugar. Cook over low heat for 5 minutes until a thick syrup forms.
  • In a bowl, mix together the flour, buttermilk, egg, vanilla, butter, and remaining sugar. Evenly distribute the mixture into the muffin pans.
  • Create the crumble by mixing flour, sugar, cinnamon, and butter in a bowl. Use your fingertips to blend the butter into the flour until it forms coarse crumbs.
  • Gently lift out the plums with a slotted spoon and save the syrup. Place one plum half, skin side up, on each cake, then sprinkle the crumble mixture evenly over the plums.
  • Bake for 35 minutes or until a skewer comes out clean when inserted into the center, then serve optionally with a drizzle of syrup and cream.
