German plum cake with toasted almond crust, crumbly streusel, fresh plums, lemon zest, and marzipan for a sweet, visually stunning treat.
Ingredients:
  • 2 pounds black plums, pitted and sliced
  • 0.75 cup sliced almonds
  • 2 tablespoons sour cream
  • 1 pinch salt
  • 4 ounces marzipan
  • 6 tablespoons salted butter, softened
  • 6 tablespoons white sugar
  • 1 teaspoon white sugar
  • 1 large lemon, zested
  • 3 large eggs
  • 1.5 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 5 teaspoons butter, melted
  • 0.5 teaspoon vanilla extract
  • 0.75 cup all-purpose flour
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 10-inch springform pan.
  • Arrange plum slices in a single layer on paper towels to slightly dehydrate as you get the cake ready.
  • To make the almond crust, toast almonds with sour cream in a saute pan over medium heat for about 3 minutes until lightly golden. Remove from heat, sprinkle with salt, then crush almonds by hand and spread evenly on the bottom of the pan.
  • In a large bowl, blend marzipan and softened butter until mostly combined. Mix in 6 tablespoons plus 1 teaspoon sugar and lemon zest until fully incorporated. Add eggs one at a time, making sure to mix well after each addition.
  • In a separate bowl, combine 1 1/2 cups plus 2 tablespoons of flour with baking powder. Gradually blend the dry mixture into the wet ingredients until fully combined.
  • Dollop the batter onto the almond crust, then gently spread it from the center outwards to the edges, ensuring even distribution without moving the almonds.
  • Layer the plum slices over the batter, gently pressing down after each layer, leaving the top layer untouched. Aim for 3 to 4 layers of plums.
  • Make streusel by combining sugar, melted butter, and vanilla in a bowl until thoroughly mixed. Add 3/4 cup plus 1 tablespoon flour and mix by hand until crumbly. Sprinkle evenly on top of the cake.
  • Bake in the center of the preheated oven until a toothpick inserted in the center comes out clean, starting to check at 48 minutes. If the plums are very juicy, it may take an additional 10 minutes. Avoid overcooking the streusel layer.
  • Take out of the oven and allow to cool on a wire rack for 5 minutes. Use a table knife to gently loosen the edges. Remove the sides and let it cool completely before serving, which should take about 30 minutes.
