Easy and delicious plum cake with cinnamon-sugar topping, ideal for fresh plums in season.
Ingredients:
  • 0.75 cup white sugar
  • 0.5 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 12 medium Italian plums, halved and pitted
  • 1.5 tablespoons cinnamon sugar, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10-inch springform pan.
  • In a large bowl, cream together sugar and butter until light and fluffy using an electric mixer. Add eggs one at a time, beating well after each addition. In a separate bowl, sift together flour, baking powder, and salt, then gently fold into the butter mixture. Transfer the batter into a springform pan and spread evenly.
  • Arrange plums cut-side up on the batter and sprinkle evenly with cinnamon-sugar.
  • Bake on the lowest rack in the preheated oven for 40 to 50 minutes or until a toothpick inserted into the center comes out clean. Serve warm or let it cool to room temperature.
