Plum tray bake with white chocolate custard

Indulgent plum bake with white chocolate custard.
Ingredients:
  • 250g cream cheese, at room temperature
  • 4.40 gm vanilla extract
  • 55g caster sugar
  • 4 eggs
  • 175g softened unsalted butter
  • 175g brown sugar
  • 200g self-raising flour, sifted
  • 400g plums, seeds removed, sliced
  • 250ml milk
  • 300ml thickened cream
  • 4 egg yolks
  • 20.00 gm cornflour
  • 110g caster sugar
  • 100g white chocolate, finely chopped
Instructions:
  • Preheat your oven to 180°C and prepare a 18cm x 28cm lamington pan by greasing and lining it.
  • Combine cream cheese, vanilla, caster sugar, and 1 egg in the bowl of an electric mixer. Beat for 2-3 minutes until smooth.
  • In a clean bowl, combine butter, brown sugar, flour, and the remaining 3 eggs. Beat for 2-3 minutes until creamy. Spread half of the flour mixture in the tray, followed by half of the cream cheese mixture, swirling gently to combine. Top with half of the plums, then repeat the layers with the remaining flour mixture, cream cheese mixture, and plums. Bake for 45 minutes or until golden.
  • Prepare the custard by gently heating the milk and cream in a saucepan until almost boiling. Combine the yolks, cornflour, and sugar in a bowl, then gradually pour the hot cream into the egg mixture. Transfer the mixture to a fresh saucepan and cook over low heat, stirring continuously for 4-5 minutes until the custard thickens to coat the back of a spoon. Take off the heat, add the chocolate, and stir until silky smooth.
  • Sprinkle the plum tray bake with a dusting of icing sugar, then cut into slices and enjoy with rich warm chocolate custard.
