Sausage, fennel and apple tray bake recipe

Delicious sausage, fennel, and apple tray bake elevates this classic favorite!
Ingredients:
  • 8 baby white potatoes
  • 500g pkt Australian Pork Sausages with Cider & Apple
  • 2 small fennel, quartered, fronds reserved
  • 2 red apples, thickly sliced crossways
  • 80ml plum sauce
Instructions:
  • Preheat the oven to 200°C, then lay the potatoes on a paper towel-lined plate and prick them all over with a fork.
  • Moisten with a touch of water and top with another paper towel. Microwave the potatoes on high for 5 minutes or until they are just tender.
  • Spray a large flameproof roasting pan with olive oil spray and heat over medium-high heat. Cook sausages, turning occasionally, for 5 minutes or until browned all over. Remove from heat and transfer sausages to a plate.
  • Combine potatoes and fennel in the pan, gently crush with a potato masher, spray with oil, and bake for 20 minutes or until golden.
  • Place the apple in the pan with the sausages. Bake for 20 minutes, flipping the apple halfway through. Drizzle with the plum sauce and bake for another 5-7 minutes until the sausages are cooked and the apple and veggies are golden. Finish by sprinkling with the reserved fennel fronds.
