Whip up this stunning Plum Walnut Skillet Cake in minutes using a food processor. Customize with your favorite plums.
Ingredients:
  • Butter (for the pan)
  • 5 to 6 firm plums (about 1 pound)
  • 3/4 cup walnuts halves
  • 1/2 cup (1 stick) unsalted butter, cut into slices
  • 3/4 cup sugar
  • 2 large eggs
  • Zest of one lemon
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons turbinado sugar or sugar in the raw
  • 2 tablespoons honey (optional)
Instructions:
  • Preheat the oven to 350ºF and generously butter a 10-inch ovenproof skillet with a heatproof handle or a 9-inch cake pan. Halve, pit, and thinly slice the plums.
  • Pulverize the walnuts: Use either a food processor or nut mill to finely chop the walnuts before transferring to a bowl.
  • Prepare the batter: Combine butter and sugar in a food processor and blend until creamy, for about 30 to 60 seconds. Gradually add eggs one by one, processing until fluffy. Mix in lemon zest, vanilla, flour, baking powder, and salt until batter is smooth. Finish by pulsing in ground walnuts until incorporated, resulting in a thick batter.
  • Prepare the cake: Pour the batter into the skillet and use a spoon to even out the top surface. Place plum slices in a circle around the perimeter, slightly overlapping. Create another circle inside the first one, then fill the center of the cake with the rest of the slices. Sprinkle with turbinado sugar.
  • Bake the cake for 35-50 minutes, checking every 5-10 minutes until the top is golden brown and a toothpick inserted in the center comes out clean. Cool on a wire rack to room temperature.
  • For a glossy finish, warm the honey in the microwave for 10 seconds then brush it over the cake for added shine and a stunning presentation.
  • Present the dish directly from the skillet.
