Ready in 35 minutes, plum and walnut bran muffins topped with butter and orange marmalade - a delicious breakfast treat.
Ingredients:
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup bran flake cereal, crushed
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 egg, slightly beaten
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 cup quartered orange-flavored or regular dried plums
  • 1/2 cup coarsely chopped walnuts
  • 2 tablespoons granulated sugar
Instructions:
  • Preheat your oven to 400°F. Grease 12 medium muffin cups (each 2 3/4x1 1/4 inches) with shortening, or use paper baking cups and spray with cooking spray.
  • Combine flour, cereal, brown sugar, baking powder, baking soda, and salt in a large bowl, mixing with a spoon. Add egg, buttermilk, and oil, stirring just until combined. Gently fold in plums and walnuts. Divide batter evenly among muffin cups and sprinkle each muffin with 1/2 teaspoon of granulated sugar.
  • Bake for 13 to 15 minutes until a toothpick inserted in the center comes out clean. Transfer to a wire rack and serve warm.
