Plum strudel

Ingredients:
  • 4 (about 320g) medium plums, stones removed, chopped
  • 55g (1/2 cup) walnut halves, chopped
  • 65g (1/3 cup) raisins, chopped
  • 60g (1/4 cup) caster sugar
  • 2.50 gm ground cinnamon
  • 4 sheets filo pastry
  • 36.80 gm vegetable oil
  • 125ml (1/2 cup) thin cream
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 220°C. Mix plums, walnuts, raisins, sugar, and cinnamon in a bowl and keep it aside.
  • Lay down 1 filo sheet on a clean surface and gently brush with oil. Place another sheet on top, brush with oil, and repeat layering with the rest of the filo, ensuring the top layer is brushed with oil. Spread plum mixture along one short edge, leaving a 4cm border on each side. Fold in sides and roll up tightly to form a log. Brush any leftover oil on top. Transfer to a baking tray and bake for 15-18 minutes until golden brown.
  • Whip the cream in a bowl with an electric beater until soft peaks form.
  • Sprinkle strudel with powdered sugar, slice into 4 equal pieces, and enjoy with a dollop of whipped cream.
