Scrumptious fresh plum cake, perfect on its own or with a side of creamy vanilla ice cream.
Ingredients:
  • 0.5 cup whole wheat flour
  • 0.5 cup all-purpose flour
  • 0.5 cup butter, softened
  • 0.75 cup white sugar
  • 3 plums, pitted and sliced
  • 1 tablespoon white sugar, or as needed
  • 1 teaspoon cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 7x11-inch baking dish with cooking spray.
  • Combine whole wheat flour, white flour, baking powder, and salt in a bowl. In a separate large bowl, cream together butter and 3/4 cup sugar, then mix in eggs one at a time. Gradually stir in flour mixture in two parts until just combined. Pour batter into baking dish and top with sliced plums. Sprinkle 1 tablespoon sugar and cinnamon over the fruit before baking.
  • Bake in the oven already heated to perfection until a toothpick inserted in the cake's center emerges clean, for 50 to 55 minutes.
