Indulge in a decadent butter cake with fresh plum topping for a sweet and elegant treat.
Ingredients:
  • 0.5 cup butter, softened
  • 1 teaspoon lemon zest
  • 0.5 teaspoon baking powder
  • 1.25 cups plums, pitted and quartered
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then generously grease and flour a 9-inch tube pan.
  • Separate the eggs. Beat the egg whites in a small bowl until stiff peaks form, then set aside.
  • Combine the butter and sugar in a large bowl until creamy. Mix in the egg yolks and lemon zest.
  • Combine flour and baking powder, then mix into the creamed mixture. Carefully fold in the egg whites. Spread batter evenly in the pan; it will be about an inch thick. Place plums decoratively on top, skin side down.
  • Bake in a hot oven until a tester inserted in the center comes out clean, approximately 40 minutes. Place on a cooling rack to cool before serving.
