Peach and Plum Cake

Summer cake with fresh peaches and plums, ideal with a side of vanilla ice cream.
Ingredients:
  • 1 teaspoon unsalted butter, or as needed
  • 1.5 cups white sugar, divided
  • 1 stick unsalted butter, room temperature
  • 2 extra large eggs
  • 1 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 5 medium ripe plums, pitted and sliced
  • 3 large ripe peaches - peeled, pitted, and sliced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9-inch square baking pan.
  • Use an electric mixer to cream together 1 cup of sugar and 1 stick of butter until light and fluffy. Incorporate eggs one at a time, beating well after each addition. Mix in yogurt and vanilla extract until smooth. Gently blend in flour, baking soda, baking powder, and salt until just combined. In a separate bowl, mix 1/2 cup sugar with cinnamon.
  • Evenly distribute the batter in the pan and generously sprinkle half of the cinnamon-sugar mixture on top. Layer the plums and peaches over the batter, then sprinkle the rest of the cinnamon-sugar mixture over the fruits.
  • Bake in the preheated oven for 45 to 60 minutes until a toothpick inserted into the center comes out clean. Avoid overbaking. Serve warm or at room temperature.
