Indulge in a delicious grilled fruit dessert with lemon loaf and raspberry yogurt for a refreshing family treat.
Ingredients:
  • 1/2 x 425g lemon loaf cake, cut into 4 thick slices
  • Olive oil spray
  • 1/2 pineapple, peeled, thickly sliced
  • 2 pieces summer fruit (peach or plum), halved, seeded
  • 187.50 ml plain Greek-style yoghurt
  • 125.00 ml fresh frozen raspberries, thawed
  • Mint sprigs (optional), to serve
Instructions:
  • Preheat the barbecue grill or chargrill on high. Spritz oil on the cut sides of the lemon loaf. Also, spray oil on the pineapple slices and other fruit. Grill the lemon loaf and fruit in batches, flipping once, until they are charred and heated through.
  • Next, take a small bowl and combine the yoghurt with the raspberries, gently swirling them together.
  • Plate the sliced chargrilled lemon loaf and chargrilled fruit. Garnish with fresh mint sprigs and raspberry yogurt on the side.
