Palm sugar chargrilled mango cheeks

Indulge in grilled mango with caramelized sugar and coconut, served with zesty lime sorbet for a perfect barbeque dessert.
Ingredients:
  • 20g shredded coconut
  • 4 mangoes
  • 80ml lime juice
  • 60.00 ml grated dark palm sugar or dark brown sugar
  • Lemon sorbet, to serve
Instructions:
  • Toast the coconut in a frying pan over medium heat, stirring occasionally until golden brown.
  • Slice off the two sides of the mango to remove the cheeks. Score the cut surface of the cheeks in a criss-cross pattern.
  • Preheat a chargrill pan or barbeque grill over medium heat. Drizzle lime juice over the cut side of the mango and sprinkle with palm or brown sugar.
  • Grill the mango cut side down until golden, about 3-4 minutes. Plate, top with coconut, and serve with a scoop of sorbet.
