Palm sugar balls

Vegan-friendly recipe.
Ingredients:
  • 500g packet glutinous rice flour
  • 400ml can coconut cream
  • 1/4 tsp pandan essence
  • 120g dark palm sugar
  • 85.00 gm desiccated coconut
Instructions:
  • In a bowl, combine rice flour, coconut cream, and pandan essence to form a firm dough, kneading lightly to distribute the pandan essence evenly.
  • 1. Bring a large saucepan of water to a boil over medium-high heat. 2. Cut palm sugar into pieces the size of a 5 cent coin. 3. Roll tablespoonfuls of dough into balls, flatten each ball and wrap around a piece of palm sugar. 4. Pinch dough to enclose the sugar and roll until smooth.
  • Spread coconut in a shallow dish. Boil balls in small batches for 8 minutes or until they float. Use a slotted spoon to remove them, then coat them in warm coconut. Transfer to a plate and serve at room temperature (avoid refrigerating).
