British flapjacks: Buttery oat bars, sweet and customizable. Perfect for dessert or on-the-go snacking. Easy and gluten-free!
Ingredients:
  • 2 1/2 cups (250g) quick-cook rolled oats
  • 1/2 cup (75g) mixed seeds
  • 1/2 cup (75g) dried fruit
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup (113g) unsalted butter
  • 1/2 cup (107g) brown sugar
  • 1/3 cup (112g) golden syrup
Instructions:
  • Preheat your oven to 350°F. Line an 8x8-inch square pan with parchment paper, ensuring the bottom and two sides are covered. Give the pan and parchment paper a light greasing.
  • In a large mixing bowl, mix together oats, seeds, dried fruit, salt, and cinnamon to blend the dry ingredients.
  • In a medium saucepan, gently heat the butter, brown sugar, and golden syrup until the butter melts. Whisk the mixture until the brown sugar dissolves and everything comes together, about 30 seconds.
  • Mix the butter mixture with the oats until well coated. Press the oat mixture evenly into the prepared pan using a spatula or the bottom of a glass.
  • Achieve perfect flapjacks by baking until beautifully golden brown around the edges and lightly golden in the middle, for 25 to 30 minutes.
  • To ensure neat slices, allow the flapjacks to cool completely for 1 to 2 hours. Use parchment paper to easily lift them out of the pan. Use a serrated bread knife to cut 9 large or 16 small flapjacks. Keep them fresh in an airtight container at room temperature for up to 1 week. If you enjoyed the recipe, please leave a review below!
