Coconut Jam Flapjacks

British flapjacks made with coconut jam and flakes, ideal for tea time indulgence.
Ingredients:
  • 1 cup coconut jam
  • 0.5 cup light brown sugar
  • 4 tablespoons vegan butter
  • 3 tablespoons golden syrup
  • 3.5 cups oats
  • 0.25 cup coconut flakes
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 10x7-inch glass pan.
  • In a saucepan over medium-low heat, melt together coconut jam, brown sugar, vegan butter, and golden syrup for about 3 minutes.
  • Grind oats in a food processor until finely pulsed.
  • Mix ground oats into the melted jam-sugar mixture until well coated. Transfer the mixture to the prepared pan, top with coconut flakes, and press down firmly.
  • Bake in the preheated oven for 10 minutes until cooked through. Allow to cool completely for 30 minutes before cutting into 36 squares.
