Excite your kids with this fun and delicious dessert that they can easily make themselves.
Ingredients:
  • 150g plain flour
  • 120.00g caster sugar
  • 125g butter, melted
  • 405g jam
  • 170g desiccated coconut
  • 2 eggs, whisked
Instructions:
  • Preheat oven to 180°C. Line a 16cm x 26cm slab pan with overhanging non-stick baking paper. Mix flour and sugar, then blend in butter until combined. Press firmly into pan base.
  • Bake until golden, then let cool for 10 minutes. Spread jam evenly over the base.
  • Combine the coconut, sugar, and eggs to create a luscious topping. Spoon the mixture over the jam, gently pressing it down. Bake until beautifully golden, about 20 minutes.
  • Allow the mixture to rest in the pan for 15 minutes, then transfer it to a wire rack to cool entirely. Cut into squares before serving.
