Create gourmet jam and coconut slice using minimal ingredients. A lunchbox hit with the kids!
Ingredients:
  • 500.00 ml plain flour
  • 215.00 gm caster sugar
  • 125g organic butter, unsalted, chilled, cubed
  • 3 eggs
  • 4.40 gm vanilla essence
  • 247.50 gm raspberry jam
  • 170.00 gm Desiccated Coconut
Instructions:
  • Preheat your oven to 180C and prepare a 3cm deep, 24cm x 29.5cm lamington pan by greasing and lining it.
  • Combine flour, a half cup of sugar, and butter in a food processor until mixture resembles breadcrumbs. Add one egg and vanilla extract, then process until a dough forms.
  • Press dough into the base of the pan and bake for 15 to 20 minutes until lightly golden. Spread jam over the warm base.
  • In a bowl, combine the remaining eggs and the remaining 1/2 cup sugar, whisking until smooth. Mix in the coconut. Spread this mixture over the jam in the pan. Bake for 25 minutes until golden brown. Let it cool completely before cutting into pieces and serving.
