Master this delectable choc-raspberry slice using just coconut, raspberries, and chocolate for a crowd-pleasing treat.
Ingredients:
  • 450g pkt Aunty Kath’s Homebake choc chip cookie dough
  • 160g (1/2 cup) raspberry jam
  • 225g pkt coconut flakes
  • 395g can sweetened condensed milk
  • 125g punnet fresh raspberries
  • 95g (1/2 cup) NESTLÉ BAKERS' CHOICE Dark CHOC BITS
  • 95g (1/2 cup) NESTLÉ BAKERS' CHOICE White CHOC BITS
  • Melted dark chocolate, to drizzle, optional
Instructions:
  • 1. Preheat the oven to 160C/140C fan forced. Line a 16 x 26cm slab pan with baking paper so it overhangs on two sides. 2. Slice the cookie dough into 15 pieces and arrange them in even rows in the pan. Use your fingertips to press the dough together to form the base. 3. Bake for 25 minutes or until golden brown.
  • Spread the jam over the cookie dough, sprinkle with coconut, then drizzle the condensed milk to cover. Add raspberries and chocolate bits on top. Bake for 30 minutes until golden and set. Optionally, drizzle with extra chocolate.
