Classic coconut jam tarts, a delightful vintage dessert.
Ingredients:
  • 12 (2 inch) frozen mini tart shells
  • 0.25 cup melted butter
  • 0.25 cup white sugar
  • 2 teaspoons evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 2 tablespoons strawberry jam
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and arrange the frozen mini tart shells on a baking sheet.
  • Cream together butter, sugar, egg, evaporated milk, and vanilla until smooth. Fold in coconut. Spoon 1/2 teaspoon of jam into each mini tart shell, then fill with 1 tablespoon of the coconut mixture.
  • Bake until the shells and topping turn a light golden brown, approximately 20 minutes in the preheated oven. Allow to cool on a wire rack.
