Coconut cream tarts topped with glazed strawberries - a delicious bite-sized treat!
Ingredients:
  • 250g mascarpone cheese
  • 50ml coconut cream
  • 2 tsp grated lemon rind
  • 100g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 350g small strawberries
  • 8 pre-cooked 8cm sweet tart shells*
Instructions:
  • Combine the mascarpone, coconut cream, lemon rind, and 30g sugar until smooth. Chill until ready to use.
  • In a saucepan, combine the remaining sugar with 1/2 cup (125ml) water, vanilla pod, and seeds. Bring the mixture to a boil while stirring, then let it simmer over low heat for 5 minutes until reduced by half. Once cooled, drizzle over the strawberries.
  • Fill the tart shells with the luscious coconut cream, adorn with a handful of glistening glazed strawberries, and generously drizzle with the tantalizing syrup for a delectable presentation.
