Delicious pan-fried pork chops topped with bacon, avocado, and butternut squash for a flavorful and satisfying meal.
Ingredients:
  • 2 cups peeled and cubed butternut squash
  • 0.5 cup minced bacon
  • 1 tablespoon dried parsley
  • 2 tablespoons vegetable oil
  • 3 pork chops
  • 0.25 cup white wine
  • 2 tablespoons brown sugar
  • 1 tablespoon butter
  • 1 teaspoon onion powder
  • 0.25 teaspoon ground white pepper
  • 1 avocado, thinly sliced
Instructions:
  • Put the butternut squash in a pot and cover with water, then bring to a boil. Lower the heat and gently simmer until it's tender, which should take about 20 to 30 minutes. Drain the squash.
  • Crisp up bacon in a skillet over medium-high heat until starting to brown, for 3 to 5 minutes. Then, toss in parsley and cook until the bacon crisps up further and the parsley is heated through, for another 3 to 5 minutes.
  • In a large skillet, heat vegetable oil on medium-high heat. Sear pork chops until one side is browned, about 3 to 5 minutes. Flip chops and add wine, allowing it to evaporate as pork cooks through, about 4 to 6 minutes. Use a thermometer to check that the center of the meat reaches 145°F (63°C).
  • Combine butternut squash, brown sugar, butter, onion powder, and white pepper in a bowl and mash until velvety and well blended.
  • Plate the pork chops and elegantly layer avocado slices, butternut squash mixture, and crispy bacon on top of each chop.
