Microwaved butternut squash soup, spiced with nutmeg, cloves, and cinnamon for a warm and comforting winter dish.
Ingredients:
  • 2 pounds butternut squash, cubed
  • 2 onions, chopped
  • 1 tablespoon butter
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • salt and pepper to taste
  • 1 dash ground nutmeg
  • 1 dash ground cloves
  • 1 dash ground cinnamon
Instructions:
  • In a spacious microwave-safe bowl, mix together the squash, onions, and butter. Cover the bowl and microwave on high for 4 minutes. Then, peel the squash.
  • Simmer squash in flavorful broth until tender, approximately 20-25 minutes on high heat.
  • Pour the squash mixture into a blender and pulse a few times, holding the lid down with a potholder. Blend until smooth. Return the pureed mixture to the microwave-safe bowl.
  • Microwave cream, salt, and pepper on high for 3 to 4 minutes until heated through. Then, season to taste with nutmeg, cloves, and cinnamon.
