Create a flavorful South African-inspired soup with butternut squash, onion, elephant garlic, and jalapeno for a tasty twist.
Ingredients:
  • 1 tablespoon butter
  • 2 large onions, finely chopped
  • 1 large jalapeno pepper, seeded and minced
  • 1 clove elephant garlic, chopped
  • 2 cups chicken stock
  • 1 teaspoon lemon juice
  • 1 (3 1/2) pound butternut squash - peeled, seeded, and cut into 2-inch cubes
  • 1 cup water
  • 6 tablespoons cream, or to taste
Instructions:
  • In a saucepan over medium heat, melt butter until sizzling. Sauté onions, jalapeno, and elephant garlic until onions are soft and translucent, around 5 minutes. Mix in chicken stock and lemon juice thoroughly. Combine butternut squash and water, then bring to a boil.
  • Lower the heat and let it simmer until the squash is tender and the soup thickens, approximately 1 hour. Use an immersion blender to puree until smooth.
  • Pour the steaming soup into bowls and elegantly swirl a dollop of cream in the center right before presenting.
