South African-inspired pumpkin soufflé casserole, simple to make and ideal as a flavorful side dish.
Ingredients:
  • 0.5 cup white sugar
  • 0.5 cup unsalted butter, softened
  • 3 large eggs
  • 1.5 cups pumpkin purée
  • 1 cup milk
  • 0.5 cup cake flour
  • 2 teaspoons baking powder
  • 1 pinch ground cinnamon, or more to taste
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C), then slick a 9-inch square baking dish with a bit of grease.
  • Using an electric mixer, blend sugar, butter, and eggs until smooth. Incorporate pumpkin purée until well combined. Add milk, cake flour, and baking powder and mix until smooth. Transfer the batter to the baking dish and sprinkle cinnamon on top before baking.
  • Bake in the oven until the center is firm, for 45 minutes to 1 hour.
