Savory South African beef chuck soup with sugar beans, onions, and red wine - perfect for a cozy evening.
Ingredients:
  • 2.5 cups speckled sugar beans
  • water to cover
  • 2 pounds bone-in beef chuck, cut into chunks
  • 4 large onions, thickly sliced
  • 1 cube beef bouillon
  • 2.5 tablespoons hot water
  • 0.75 cup red wine
  • 0.25 cup tomato paste
  • 1 packet dry oxtail soup mix
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 pinch cayenne pepper
Instructions:
  • Put sugar beans in a large container and cover with cool water by several inches; allow to soak for 8 hours to overnight.
  • In a large pot over medium heat, braise beef chuck with onions until tender, about 1 1/2 hours. Remove beef, discard bones, and cut into bite-size pieces. Set onions aside in a bowl.
  • Combine sugar beans and their soaking water in a pot and bring to a gentle boil. Simmer until beans are tender, approximately 1 hour, adding more water if necessary. Stir in beef pieces and onions, then bring soup to a boil.
  • Start by infusing the rich flavors by dissolving a beef bouillon cube in 2 1/2 tablespoons of hot water. Next, combine with wine, tomato paste, dry soup mix, Worcestershire sauce, soy sauce, and cayenne pepper. Gently incorporate this mixture into the boiling soup. Lower the heat, allowing the flavors to meld beautifully for about 10 minutes.
