Press sugary crust dough into pie tin, bake. Pour sweet milky custard filling into baked shell, sprinkle with cinnamon, chill. Makes two delightful pies.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 4 cups milk
  • 1 tablespoon butter
  • 2.5 tablespoons all-purpose flour
  • 2.5 tablespoons cornstarch
  • 2 eggs, beaten
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Cream together 1/2 cup butter or margarine and 1 cup sugar in a medium mixing bowl until smooth. Beat in 1 egg. In a separate bowl, combine 2 cups flour, baking powder, and salt. Gently mix the flour mixture into the sugar mixture until thoroughly combined. Press the mixture into two 9-inch pie pans.
  • Bake until beautifully golden brown, about 10-15 minutes in a preheated oven.
  • Combine milk, vanilla extract, and a tablespoon of butter in a large saucepan. Bring to a boil over medium heat, then remove from heat.
  • Combine 2 1/2 tablespoons of flour, cornstarch, and 1/2 cup of sugar in a bowl. Whisk in beaten eggs until smooth. Slowly incorporate into milk. Bring mixture to a boil over heat, stirring constantly. Boil and stir for 5 minutes. Divide mixture between pastry shells, sprinkle with cinnamon. Chill and serve.
