South African bobotie: Meatloaf with curry, turmeric, raisins, and vinegar for bold flavors.
Ingredients:
  • 1 onion, chopped
  • 1 tablespoon oil, or as needed
  • 1 pound ground beef
  • 0.5 slice bread
  • 0.5 cup milk, divided
  • 1 egg, beaten, divided
  • 0.25 cup seedless raisins
  • 1 tablespoon white vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 0.5 teaspoon curry powder
  • 0.25 teaspoon ground black pepper
  • 2 bay leaves
  • 1.5 tablespoons chutney
Instructions:
  • Warm up the oven to 350 degrees F (175 degrees C).
  • In a skillet over medium-high heat, saute onions in oil until browned for about 5 minutes. Then add ground beef and continue to saute until browned for another 5 minutes.
  • In a small bowl, soak bread in 1/4 cup of milk until softened. Mash the bread and add it to the ground beef mixture. Stir in half of the beaten egg, along with raisins, vinegar, sugar, turmeric, salt, curry powder, and ground black pepper.
  • Place the seasoned beef mixture into a glass baking dish and tuck in the bay leaves for added flavor.
  • Place in a preheated oven for 30 minutes. Combine the remaining 1/2 egg and 1/4 cup milk in a small bowl, then pour over the meat mixture. Return to the oven for an additional 30 minutes.
  • Enjoy with a side of flavorful chutney.
