Spiced South African meatloaf with raisins, almonds, and curry for a unique sweet-and-savory twist.
Ingredients:
  • 1 tablespoon butter
  • 2 onions, diced
  • 2 eggs
  • 1 cup milk
  • 1 cup old-fashioned oats
  • 0.75 cup golden raisins
  • 0.25 cup slivered almonds
  • 2 tablespoons vinegar
  • 2 tablespoons curry powder, or to taste
  • 1 tablespoon white sugar
  • 2 teaspoons salt
  • 0.75 teaspoon ground turmeric
  • 0.25 teaspoon ground black pepper
  • 2 pounds lean ground beef
  • 4 bay leaves, or more to taste
  • 1 egg
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a large baking dish.
  • Melt butter in a skillet over medium heat, then cook and stir onion until caramelized, about 5 to 7 minutes.
  • In a large bowl, mix together 2 eggs, 1 cup milk, oats, raisins, almonds, vinegar, curry powder, sugar, salt, turmeric, and black pepper. Add onions and ground beef, then thoroughly combine. Spread this mixture evenly into a baking dish and garnish with bay leaves before baking.
  • After baking for 30 minutes in a preheated oven, carefully remove and drain any excess fat from the beef.
  • Combine a beaten egg and 1/4 cup of milk in a bowl; then, evenly pour it over the beef mixture.
  • Bake in the oven for an additional 30 minutes, or until the top is nicely browned. Remove and discard the bay leaves before serving.
