Deliciously spiced South African mince bake with a creamy custard topping.
Ingredients:
  • 18.20 gm olive oil
  • 30g unsalted butter
  • 2 onions, finely chopped
  • 1 apple, peeled, diced
  • 1kg beef mince
  • 2 eggs
  • 125.00 ml fresh breadcrumbs
  • 20.00 gm mild curry powder
  • 125.00 ml raisins
  • 40.00 ml toasted slivered almonds
  • 42.00 gm lemon juice
  • 1/2 tsp ground turmeric
  • 125ml milk
  • 6 bay leaves
Instructions:
  • Preheat the oven to 170°C for a perfectly baked dish.
  • In a pan over medium heat, warm oil and butter. Sauté onion until soft for 2-3 minutes. Add apple for 2 minutes, then stir in mince until browned for another 2-3 minutes. Combine with 1 egg, breadcrumbs, curry powder, raisins, almonds, and lemon juice. Season mixture, transfer to a 20 x 30cm baking dish, cover with foil, and bake for 40 minutes.
  • In a bowl, combine the last egg with turmeric and milk. Take the dish out of the oven, remove the foil, and carefully pour the egg mixture on top. Place bay leaves along the center and bake for an additional 15 minutes or until golden brown.
