Three-cheese lasagna with butternut squash noodles, ground beef, and fresh basil - a delicious twist on a classic favorite!
Ingredients:
  • 2 butternut squash - peeled, seeded, and thinly sliced
  • 2 tablespoons olive oil, or to taste
  • 1 tablespoon Italian seasoning, divided, or to taste
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 (28 ounce) jar pasta sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon chopped fresh basil
  • 2.5 teaspoons salt, divided
  • 1 (16 ounce) container ricotta cheese
  • 2 eggs, beaten
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons dried parsley
  • 1 (8 ounce) ball fresh mozzarella cheese, shredded
  • 2 tablespoons grated Parmesan cheese, or to taste
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and line 2 baking sheets with parchment paper for easy cleanup.
  • Lay out the butternut squash slices evenly on the baking sheets. Drizzle each layer with 1 tablespoon of olive oil and sprinkle with 1 teaspoon of Italian seasoning, salt, and pepper for each.
  • Roast in the oven until the squash is tender yet slightly firm, approximately 15 minutes.
  • Preheat a large skillet over medium heat. Add beef and garlic; cook until browned, about 5 minutes. Drain excess grease. Stir in 1 teaspoon Italian seasoning, pasta sauce, brown sugar, basil, and 1 1/2 teaspoon salt. Simmer, stirring occasionally, until flavors meld, about 10 minutes.
  • Combine the remaining teaspoon of salt with ricotta cheese, eggs, 1/2 cup Parmesan cheese, and parsley in a bowl.
  • Begin by gently arranging one-third of the delicate squash slices at the base of a 9x13-inch baking dish. Evenly spread half of the creamy ricotta mixture on top of the squash, followed by half of the gooey mozzarella cheese and one-third of the savory beef mixture. Repeat the layers, finishing with the remaining squash slices and sauce. Finally, generously sprinkle 2 tablespoons of flavorful Parmesan cheese over the top before baking.
  • Place the dish in the preheated oven until the cheeses are melted and the sauce is bubbly, approximately 30 minutes. Allow it to rest for 10 minutes before serving.
