Creamy butternut squash casserole with a sweet brown sugar crust - perfect for holiday meals.
Ingredients:
  • 1 butternut squash
  • 1.5 cups milk
  • 2 tablespoons all-purpose flour
  • 3 eggs
  • 0.25 cup margarine, melted
  • 0.5 (16 ounce) package vanilla wafers, crushed
  • 0.5 cup margarine, melted
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Place the butternut squash in the microwave and cook on high until soft, for 2 to 3 minutes. Then, cut it in half, remove the seeds, and cube it. Next, boil a large pot of water, add the squash, and cook until tender, for about 15 minutes. Finally, drain the squash and mash it.
  • In a 9x13-inch casserole dish, harmonize 3 cups of mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs, and 1/4 cup of melted butter.
  • Bake in a hot oven until firm, approximately 45 minutes.
  • Mix together crushed vanilla wafers, 1/2 cup melted butter, and brown sugar in a bowl. Sprinkle over the cooked casserole and bake until golden brown.
