Brown butter thyme butternut squash: a simple, flavorful Thanksgiving side dish.
Ingredients:
  • 1 1/2 pounds butternut squash, peeled, seeds removed, flesh diced into 1/2-inch pieces (about 4 cups)
  • 3 tablespoons butter
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon of dried)
  • Salt and freshly ground black pepper
Instructions:
  • Brown the butter: In a large skillet over medium heat, melt the butter, whisking frequently until it turns a honey-colored brown and gives off a nutty aroma. Remove from heat and whisk in the thyme, being cautious as it may foam up slightly if using fresh thyme. If the butter burns, discard it and start over.
  • Saute the cubed butternut squash in butter over medium-high heat until golden brown on multiple sides. Coat the squash with thyme-infused butter, season with salt and pepper, and cook without stirring to develop a caramelized exterior.
  • Reduce the heat to low, cover the pan, and simmer until the squash is tender, for 10 to 20 minutes based on the size of the pieces. Season with salt and pepper to taste, then garnish with extra chopped fresh thyme before serving. Feel free to leave a review and comment if you enjoyed the dish!
