Butternut squash mash with butter and brown sugar is a tasty holiday side dish.
Ingredients:
  • 1 butternut squash, halved lengthwise and seeded
  • 0.25 cup butter, divided
  • 0.25 cup brown sugar, divided
  • 0.125 teaspoon apple pie spice
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a baking sheet.
  • Place the squash halves, cut-side up, on the baking sheet. Fill each squash cavity with 1 tablespoon of butter and 1 tablespoon of brown sugar.
  • Roast in the preheated oven until the skin is crispy and the flesh is tender, approximately 1 hour. Let the squash cool until easily manageable, around 10 minutes.
  • Transfer the squash flesh into a large bowl and combine it with the remaining butter, brown sugar, and apple pie spice. Use an electric mixer on medium speed to whip the mixture until fluffy.
