Whipped Roasted Butternut Squash

Tender baked winter squash, perfectly whipped.
Ingredients:
  • 2 butternut squash, halved and seeded
  • 0.5 cup margarine
  • 1 cup light sour cream
  • salt and pepper to taste
Instructions:
  • Preheat oven to 350°F (175°C).
  • Arrange squash halves cut side down in a baking dish, ensuring they are submerged in water. Cover and bake in a preheated oven for 1 hour until they are tender.
  • Transfer the scooped squash into a medium bowl, add margarine and light sour cream, and mix until smooth. Season with salt and pepper.
