Elevate squash with tangy citrus, butter, marmalade, and spices for a flavorful twist.
Ingredients:
  • 1 large (3 to 3 1/2 lb) butternut squash, cut into 8 pieces
  • 1/2 teaspoon salt
  • 1/4 cup butter or margarine, melted
  • 1/4 cup orange marmalade
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
Instructions:
  • Preheat oven to 375°F and generously grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange the squash halves in the baking dish, cut sides facing up.
  • Cover the dish with foil and bake for 45 minutes. After that, sprinkle with salt. In a small bowl, combine butter, marmalade, cinnamon, and nutmeg. Brush this mixture over the squash. Bake for an additional 20 to 30 minutes until the squash is glazed and tender.
