Cozy up with velvety butternut squash and sweet potato soup infused with ginger, garlic, and onion to nourish and comfort during chilly winter days.
Ingredients:
  • 1 (2 pound) butternut squash - peeled, seeded, and cut into large chunks
  • 4 sweet potatoes, peeled and cut into chunks
  • 1 onion, peeled and chopped
  • 1 (2 inch) piece fresh ginger, peeled and finely chopped
  • 3 cloves garlic, peeled and chopped
  • 1.5 quarts water, or amount to cover
  • 1 cup plain yogurt, or amount desired
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, combine the squash, sweet potatoes, onion, ginger, and garlic. Add enough water to cover the vegetables. Simmer over medium heat until the vegetables are tender and fork-tender, about 30 to 45 minutes.
  • Take the pot off the heat. Blend the soup in batches until smooth. Put the soup back into the pot and stir in the yogurt. Season with salt and pepper to your liking. Reheat gently if needed, avoiding boiling.
