Indulgent butterscotch bourbon pudding topped with candied bacon, whipped cream, and candied pecans.
Ingredients:
  • 4 ounces butter
  • 1 cup packed dark brown sugar
  • 1 teaspoon coarse sea salt
  • 6 tablespoons cornstarch
  • 5 cups whole milk
  • 4 large eggs
  • 2 tablespoons bourbon
  • 6 slices Farmland® Bacon
  • 0.5 cup light brown sugar
  • 1 tablespoon bourbon
  • 0.25 cup maple syrup
  • Whipped cream for garnish
  • Candied pecans for garnish
Instructions:
  • In a medium saucepan, melt butter. Stir in dark brown sugar and salt until sugar dissolves. Remove from heat.
  • In a small bowl, smoothly blend cornstarch with 1/4 cup of milk; then whisk in the eggs.
  • While whisking constantly, slowly pour the remaining milk into the melted brown sugar. Then, whisk in the cornstarch mixture.
  • Place the pan back on the heat and bring the mixture to a boil, whisking frequently. Once it bubbles, lower the heat to a simmer and cook for 1 minute, whisking constantly, until the pudding thickens.
  • Take the mixture off the heat and blend in the bourbon and vanilla for a rich and flavorful touch.
  • Transfer the mixture into individual dishes and refrigerate until fully chilled before enjoying.
  • Preheat your oven to 350°F.
  • Place a wire rack on top of a parchment-lined baking sheet.
  • In a small saucepan over medium heat, combine brown sugar, bourbon, and maple syrup. Stir frequently until the mixture thickens.
  • Lay bacon slices on a rack and generously brush both sides with half of the glaze. Add a sprinkle of extra brown sugar for more sweetness, if desired.
  • Place in a preheated oven for 8 minutes, then flip the bacon and brush with the remaining glaze. Continue cooking until crispy and golden brown.
  • For serving: Garnish butterscotch puddings with crispy bacon, fluffy whipped cream, and sweet candied pecans.
