Apple and butterscotch sponge pudding

Winter pudding with apples and butterscotch sauce - a divine combination!
Ingredients:
  • 60g butter, chopped
  • 5 Granny Smith apples, peeled, cored, cut into wedges
  • 45.00 gm brown sugar
  • 83.33 gm pure cream
  • 70.95 gm caster sugar
  • 82.50 ml plain flour
  • 49.50 gm self-raising flour
  • 40.00 gm boiling water
  • 20g butter, melted
  • Double cream, to serve
  • Icing sugar, to serve
Instructions:
  • 1. Preheat your oven to 180°C (160°C fan-forced). 2. In a large non-stick frying pan over medium heat, melt butter. 3. Add half of the apple slices to the pan and cook, turning occasionally, for 6 to 8 minutes until caramelized and tender. 4. Transfer the cooked apples to a greased 3cm-deep, 16.5cm x 24cm (base) baking pan. 5. Repeat with the remaining apple slices.
  • Combine brown sugar and cream in a pan. Cook and stir for 2 minutes until sugar dissolves and mixture thickens slightly. Remove from heat and drizzle over apple.
  • Beat eggs, sugar, and vanilla in a bowl with an electric mixer on high speed for 8 to 10 minutes until thick and creamy. Gently fold in sifted flours. Then fold in boiling water and melted butter. Pour over apple mixture, bake for 30 to 40 minutes until a skewer inserted in the sponge comes out clean. Dust with icing sugar and serve with cream.
