Apple and walnut loaf with butterscotch sauce recipe

Indulge in a cozy winter treat: apple walnut loaf drizzled with decadent butterscotch sauce.
Ingredients:
  • 125g butter, softened
  • 180.00 gm firmly packed brown sugar
  • 2 eggs
  • 150.00 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cardamom
  • 84.98 gm milk
  • 2 gala apples, cored, cut into 1.5cm pieces
  • 57.50 gm walnuts, roughly chopped
  • 50g butter
  • 126.25 gm pure cream
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and generously grease a 6cm-deep, 9.5cm x 19.5cm loaf pan. Line the pan with baking paper, ensuring the paper extends 2cm above the edges on all sides.
  • In an electric mixer, whip butter and sugar for 5 to 6 minutes until fluffy. Add eggs one at a time, mixing well after each. Sift in flour, cinnamon, and cardamom. Mix in milk and most of the chopped apple until just combined.
  • Transfer the mixture into the prepared pan, ensuring a smooth top. Sprinkle walnuts and the remaining apple on top. Bake for 35 to 40 minutes or until a skewer inserted in the center comes out clean. Let it sit in the pan for 10 minutes before transferring to a serving board.
  • While you wait, prepare the Butterscotch Sauce. Combine butter, sugar, and cream in a small saucepan over medium heat. Stir and cook for 4 minutes until the sugar dissolves. Increase the heat to medium-high and bring to a boil. Then, reduce the heat to medium-low and simmer for 5 minutes until slightly thickened.
  • Present the cake warm, generously drizzled with decadent butterscotch sauce.
