Whip up a delicious apple walnut loaf for a delightful tea-time snack.
Ingredients:
  • Melted butter, for greasing
  • 125g unsalted butter, cubed, at room temperature
  • 220g (1 cup) caster sugar
  • 4.40 gm vanilla essence
  • 2 eggs
  • 2 golden delicious apples
  • 225g (1 1/2 cups) plain flour
  • 5.00 gm ground cinnamon
  • 4.00 gm baking powder
  • Pinch salt
  • 125mls (1/2 cup) milk
  • 60g (1/2 cup) walnut pieces, finely chopped
  • 40.00 gm caster sugar, extra
  • 20g (1 tbsp) butter, melted
Instructions:
  • Preheat oven to 170°C while you generously grease a 9.5 x 19.5cm loaf pan with melted butter and line the base with non-stick baking paper.
  • In a medium mixing bowl, beat butter, sugar, and vanilla essence with electric beaters until pale and creamy, scraping down the bowl occasionally. This should take about 5-10 minutes. Add the eggs one at a time, beating well after each addition until combined.
  • Peel and dice 1 apple. Combine flour, 1 teaspoon of cinnamon, baking powder, and salt in a separate bowl. Alternate folding flour mixture and milk into butter mixture. Gently fold in diced apple and walnuts. Transfer the batter to the pan and level the surface with a spoon.
  • Peel the last apple, quarter it, and remove the core. Slice each quarter thinly lengthwise with the rounded-side up, keeping the slices together. Line the center of the loaf mixture with the apple slices.
  • Bake in a preheated oven for 1 hour, or until a skewer inserted into the center comes out clean. Then, transfer the loaf to a wire rack.
  • Mix together the leftover cinnamon and additional caster sugar in a small bowl. Brush the warm loaf with the melted butter and generously sprinkle with the fragrant cinnamon sugar. Enjoy the loaf warm or at room temperature.
