Golden apple and walnut cobbler

Ingredients:
  • 7 (about 1.5kg) large Granny Smith or golden delicious apples
  • 100g (1/2 cup, firmly packed) brown sugar
  • 50g (2 1/2 tbsp) butter, cubed
  • 1/4 tsp ground cardamom
  • Icing sugar, to serve
  • Vanilla ice-cream or thin cream, to serve
  • 150g (1 cup) self-raising flour
  • 32.00 gm brown sugar
  • 30g (1 1/2 tbsp) butter, cubed, at room temperature
  • 55g (1/2 cup) walnuts, finely chopped
  • 100mls (5 tbsp) thin cream
  • 5.10 gm thin cream, extra
  • 24.00 gm brown sugar, for sprinkling
Instructions:
  • Peel, quarter, and core the apples, then cut each quarter lengthwise into 4 slices. In a large saucepan over medium heat, melt the butter with brown sugar. Add the apple slices and cook covered on medium-low heat for 12 minutes until almost tender. Uncover and cook for another 5 minutes until most liquid evaporates. Mix in the cardamom and transfer the apple mixture to a 20cm wide, 5cm deep ovenproof dish, piling the apples towards the center. Let it cool slightly as you prepare the topping.
  • Heat your oven to 180°C.
  • For the topping, mix together self-raising flour and brown sugar in a medium bowl. Use your fingertips to blend in the butter until the mixture looks like fine breadcrumbs. Add chopped walnuts and cream. Use a knife to blend with a cutting motion until the mixture starts to come together. Bring the dough together with your hands, then knead on a lightly floured surface 4-5 times until smooth.
  • Roll the dough to 1cm thickness and cut out 7 rounds with a 6.5cm pastry cutter. Place the rounds around the outer edge of the dish on top of the cooked apples, leaving the center open. Brush with extra cream and sprinkle with brown sugar.
  • Bake in a preheated oven until the topping is golden, the apple mixture is bubbling, and cooked through, about 20 minutes.
  • Sprinkle with icing sugar and enjoy warm with a scoop of ice cream or cream.
