Ingredients:
  • 1 (15 ounce) can peaches, drained and chopped
  • 4 cloves garlic, pressed
  • 1.5 cups orange juice
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons brown sugar
  • 1.5 teaspoons nutmeg
  • 0.5 teaspoon red pepper flakes
  • 2 teaspoons dried basil
  • salt and pepper to taste
  • 4 (6 ounce) skinless, boneless chicken breast halves - cut into bite-size pieces
  • 2 tablespoons flour
  • 3 tablespoons butter
Instructions:
  • In a saucepan over high heat, combine peaches, garlic, orange juice, vinegar, sugar, nutmeg, red pepper flakes, and basil. Let it come to a boil, then reduce the heat to medium-low and simmer for 15 minutes, stirring occasionally.
  • Season the chicken generously with salt and pepper, coat it with flour, and shake off any extra. In a large skillet over medium-high heat, melt the butter until sizzling. Add the chicken and cook until golden on each side, ensuring it's still slightly pink in the middle.
  • Season the peach sauce with salt and pepper, then generously drizzle it over the browned chicken. Bring everything to a simmer, then lower the heat to medium-low, cover, and let it gently simmer for 15 more minutes until the chicken is fully cooked.
