Cabbage salad with green goddess dressing

Elevate cabbage with vibrant green goddess dressing for a standout salad.
Ingredients:
  • 1 lemon, juiced
  • 39.60 gm whole-egg mayonnaise
  • 10 slices prosciutto
  • 1 packham pear
  • 1 1/2 avocados
  • 1/2 lemon, juiced
  • 50g parmesan, shaved
  • 250g savoy cabbage, thinly shredded
  • 1/2 avocado, chopped
  • 40.00 ml finely chopped chervil, plus extra sprigs, to serve
  • 40.00 ml finely chopped tarragon
  • 20.00 ml finely chopped chives
  • 1 small eschalot, finely chopped
Instructions:
  • Mix together ripe avocado and mayonnaise until creamy. Add lemon juice, chervil, tarragon, chives, and eschalot. Season with salt and pepper, yielding 3/4 cup of delicious dressing.
  • In a frying pan over medium heat, sizzle the prosciutto in 2 teaspoons oil until crispy, about 30 seconds per side. Drain on a paper towel. Repeat with the remaining prosciutto. Finally, crumble half of the cooked prosciutto.
  • Quarter the juicy, ripe pear and creamy avocados, then delicately remove the core from the pear. Slice the pear and avocados lengthwise, then toss them together in a bowl with a splash of refreshing lemon juice.
  • Combine half of the parmesan, cabbage, crumbled prosciutto, and green goddess dressing in a bowl, tossing gently to mix everything together perfectly.
  • Arrange the cabbage and pear in bowls. Sprinkle the remaining parmesan and prosciutto on top, and garnish with extra chervil sprigs before serving.
