Delightful summer potato salad with Caesar dressing, crispy bacon, and green onions - easy and delicious.
Ingredients:
  • 8 slices bacon
  • 24 baby red potatoes
  • 2 tablespoons olive oil, or as needed
  • cracked black pepper to taste
  • 0.33333334326744 cup Caesar salad dressing
  • 4 green onions, diced
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Cook the bacon in a large skillet over medium-high heat, flipping occasionally, until evenly browned for about 10 minutes. Drain on paper towels, then crumble.
  • 1. Boil potatoes in a pot of salted water until slightly tender, about 8 minutes. Drain and transfer to a baking dish before drizzling with olive oil and seasoning with black pepper.
  • Roast in the oven until fork-tender, approximately 10 minutes.
  • Combine the potatoes, bacon bits, Caesar salad dressing, and green onions in a bowl. Serve while warm.
