Satisfying Caesar salad with effortless homemade dressing.
Ingredients:
  • 1/2 cup high quality extra virgin olive oil, plus more for brushing
  • 4 cloves garlic, minced
  • 1 baguette, preferably a day old, thinly sliced
  • 1/4 cup fresh lemon juice (plus more to taste)
  • 4 ounces Parmesan cheese, grated
  • 1 teaspoon anchovy paste, or 1-2 anchovies, minced
  • 1/4 teaspoon freshly ground black pepper (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 4-6 small heads of romaine lettuce, rinsed, patted dry, wilted outer leaves discarded
Instructions:
  • In a spacious bowl, whisk together 1/2 cup of olive oil with garlic. Allow the flavors to meld for at least 30 minutes.
  • Prepare the toasted croutons: As the garlic is infusing, arrange the baguette slices on a baking sheet in a single layer (you may need to work in batches). Brush or spray the slices with olive oil or melted butter. For a garlic flavor, use the infused oil from Step 1. Place under the broiler for a few minutes until they turn golden brown on top. Keep a close eye on them to prevent burning. Once done, set aside to cool. This can be done ahead of time.
  • Prepare the dressing by combining minced anchovies (or anchovy paste) and eggs with the oil-garlic mixture. Whisk until creamy, then mix in salt, pepper, 1/4 cup of lemon juice, and half of the Parmesan cheese. Taste and adjust lemon juice, salt, and pepper to your preference for a balanced flavor profile that highlights the dressing.
  • Tear chunks of romaine lettuce: Tear chunks of lettuce from the heads using your hands (avoid using a knife). Add to the dressing, toss until coated, and then mix in the remaining Parmesan cheese.
  • Make delicious croutons by chopping the toasted bread and adding it to the salad. Don't forget to brush in any crumbs. Toss everything together and serve right away. If you enjoyed the dish, please rate it below!
