Make a refreshing Caesar salad with flavorful anchovy dressing for a satisfying meal without the heat of cooking.
Ingredients:
  • 2 small bread rolls, thinly sliced
  • 8 prosciutto slices
  • 18.20 gm olive oil
  • 40.00 ml white vinegar
  • 4 eggs
  • 2 baby cos lettuce, washed
  • 40g parmesan, shaved
  • 2 anchovy fillets, finely chopped
  • 1 small garlic clove, crushed
  • 11.80 gm Dijon mustard
  • 21.00 gm lemon juice
  • 80ml olive oil
Instructions:
  • In a mortar, gently crush the anchovy with a pestle until almost smooth. Add garlic and mustard, then grind until well combined. Stir in lemon juice and oil, whisking until fully combined. Season with salt and pepper to taste.
  • Preheat the oven to 180°C. Spread bread slices on one tray and prosciutto on another. Drizzle the bread with oil. Bake for 6 minutes until golden and crispy. Let cool before serving.
  • When the water reaches a vigorous boil, gently add vinegar and create a whirlpool using a wooden spoon. Carefully slide a cracked egg into the center of the whirlpool. Poach for 1-2 minutes for a soft center or until desired doneness. Plate and repeat with the remaining eggs.
  • Cut the lettuce into wedges and place on serving plates along with croutons, prosciutto, and parmesan. Drizzle with anchovy dressing, top with a poached egg, and serve promptly.
