Caipirinhas with skewered chorizo

Excite your guests with zesty lime cocktails paired with spicy chorizo.
Ingredients:
  • 6 limes, quartered
  • 55g (1/4 cup) caster sugar
  • 2 (about 250g) chorizo, cut into wedges
  • 500.00 ml ice cubes
  • 18 fresh mint leaves
  • 250ml (1 cup) white rum
Instructions:
  • Distribute lime and sugar evenly into glasses. Gently crush with the end of a rolling pin.
  • Heat up a barbecue grill or chargrill to medium heat. Skewer the chorizo onto small metal or soaked bamboo skewers. Grill for 4-5 minutes, flipping occasionally, until charred and fully cooked. Transfer to a plate and cover to maintain warmth.
  • Fill the glasses halfway with ice cubes, drop 3 mint leaves into each glass, pour rum into each glass, stir until blended, and serve with skewers.
