Family favorite chili, customizable spice level, perfect for chilly nights, easily doubled for a crowd, serve with cornbread.
Ingredients:
  • 1 pound beef sausage
  • 1 onion, finely diced
  • 1 (8 ounce) package dirty rice mix
  • 2 cups water
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 2 (15 ounce) cans kidney beans, drained
Instructions:
  • Brown ground beef, sausage, and onion in a skillet over medium heat; drain excess fat.
  • Combine rice mix and water in a large pan. Add diced tomatoes, chilies, and kidney beans. Bring to a boil, then stir in the meat mixture. Season with salt and pepper. Cover and simmer for 25 minutes, fluffing the rice with a fork when done.
